strawberry whole wheat pancakes

Strawberries are everywhere right now and still super cheap. Delicious and cost effective are two of my favorite words when it comes to food.

Not to mention easy and (somewhat) healthy. These were made with whole wheat pastry flour, which lends a hearty quality to the pancakes. I also used almond milk because a) I’m allergic to milk and b) it’s all we had. They came out tasting wonderful!

Bursting with strawberries in every bite. Yum!

I highly recommend serving these pancakes with Nutella. Nutella + strawberries = heaven.

Recipe slightly adapted from How Sweet Eats (hers looks uh-mayz-ing)

Strawberry Whole Wheat Pancakes
Serves 2

1 C whole wheat pastry flour
1 tsp baking powder
1 tbsp sugar
1/4 teaspoon salt
1 egg, well beaten
1 C milk (I used almond)
3/4 C strawberries, chopped

Topping: 2 tbsp Nutella

Stir together dry ingredients. Add egg and milk. Mix until dry ingredients are moistened. Chop strawberries into pieces. Stir them into the batter. To cook, heat a griddle or skillet on medium heat and pour in 1/4 cup of batter. Flip once tiny bubbles appear on the pancakes. When they’re finished cooking, top each serving with 1 tbsp of Nutella and enjoy!
