christmas breakfast pizza

Is anyone else getting excited for Christmas already? I have already busted out my holiday music (including the incredible new Michael Buble album) and find myself daydreaming about The Nutcracker and A Christmas Carol. Downtown, bare trees glitter with white lights and a winter chill is evident in the air.

One recipe that never fails to get me in the Christmas spirit is my grandma’s breakfast “pizza” recipe (we call it pizza but it’s really more of an egg casserole… just go with it). We always bring in Christmas morning with this pizza, matching pajamas and gift opening. The Christmas season is absolutely the most wonderful time of the year, and breakfast pizza sends me to Christmas morning every time I take a bite. Plus, it tastes great reheated, so I make a big pan of this and Bri and I have a filling breakfast all week.

Breakfast Pizza
Serves 6-8

1 can crescent rolls (the Pillsbury sheet works really well)
1 cup hashbrowns (thawed)
1 lb cooked breakfast sausage
5 eggs
1/4 cup milk
1 cup cheddar cheese
salt & pepper
ketchup and/or hot sauce to taste

Preheat oven to 375*. Lay crescent roll sheet at the bottom of an ungreased 13×9 pan. Layer hashbrowns over the crescent roll sheet. Brown sausage and crumble over. Whisk together the milk and eggs, pour over. Top with shredded cheese. Season with salt and pepper. Bake, uncovered, for 25-30 minutes or until top is golden brown and crust is done.
